This is Chinese Hot Pot (pronounced "hottapot" by our guide), which was yesterday's lunch. The soup in the middle (we had a very spicy variety chosen for us) is kept simmering over a burner in the middle of the table. Thin-sliced meats and vegetables are brought, which you simmer in the soup, then bring out and eat. This is DELICIOUS. (I ate extra just for you, Anne.)
